Today we are putting our spin on classic Bolognese. Bolognese sauce is a classic family favorite dish. Today I'm sharing a delicious alternative to the traditional bolognese sauce - vegetarian bolognese sauce! As a vegetarian (and just a carb lover in general), pasta is one of my favorite meals.

Instructions to make Vegetarian Bolognese:
  1. Roughly chop the tomatoes. Finely dice the other vegetables and nuts. (Rehydrate shiitake mushrooms in water before chopping.)
  2. In a pot, heat the olive oil and sauté the vegetables in order of onions, garlic then fresh shiitake mushrooms. Add all the other vegetables (except the tomatoes) and continue to fry.
  3. Add a pinch of salt. When the vegetables are tender and lightly browned, add the tomatoes. When the tomatoes break down, pour in red wine.
  4. Add the bay leaf and simmer until thickened. Give it time to simmer for the flavors to soak in. Add salt and pepper to taste and it is ready.
  5. Cook your favorite pasta and serve it with the sauce. Rigatoni is used in the photo.
  6. This sauce can be used in lasagna as well. This bolognese sauce also goes well with gnocchi.

It's a great way to get lots of veggies, pasta, and protein for a well rounded meal. Stir in beans and cream at the end of the cooking time. Cooking vegan for my favorite meat eater is quite an enormous challenge for me sometimes. I noticed that Lauren had ordered spaghetti bolognese the last couple times we were in Italian restaurants.
