The ingredients needed to make Easy Chilli Chicken:
  1. Prepare 500 gm Chicken -
  2. Take 3 Onion - , finely diced
  3. Prepare 12 Red Chillies -
  4. Get 1 tsp Vinegar
  5. Prepare 1/2 tsp Soy Sauce
  6. Get 1inch Ginger
  7. Take 2-3 Garlic
  8. Get 1 tsp Pepper Powder
  9. Prepare 2 Green Chilli -
  10. Take as required Oil
  11. Take 3 sprigs Celery - (optional)
  12. Make ready 1/2 (optional) Capsicum -

Whisk together the oil, chopped cilantro, chili powder, cumin, salt, garlic, pepper, and cayenne in a bowl; add the chicken and toss to coat. Add the peppers and fry for another couple of minutes. Remove the chicken and peppers and set aside. In the same pan, add the garlic, red chilli, soy sauce, tomato purée, and water.

Steps to make Easy Chilli Chicken:
  1. Wash the chicken, transfer to a pressure cooker, and add two tablespoon of Soy Sauce and some Salt
  2. To this, add some freshly ground ginger, garlic and chilli (can use the mixer for about 20 seconds)
  3. Add enough water for the chicken to cook, cover and let it cook for about 10-12 minutes, till the chicken is cooked properly
  4. In a kadai, heat some oil and fry the red Chillies. Be careful to just lightly fry, and that the chilies don't turn crispy and crumble away.
  5. Tear the Chillies in the middle and remove the seeds. If you like spicy food, leave it in as per your choice.
  6. Transfer this de-seeded Chillies into a mixer, add two tablespoon of vinegar, a tiny amount of water and then grind it into a smooth paste.
  7. In a kadai, add some oil and saute the diced onions till golden brown, on high flame. If using the Celery or Capsicum, add at this point and saute for some time. Add the chilli paste to the onions (can use water and clean the mixer vessel and add that also to the kadai).
  8. Transfer the cooked chicken to the kadai, with the residual water. Add 2-3 tablespoons of Tomato Ketchup, stir nicely. Gravy tends to thicken once it cools down, so leave it a bit watery.
  9. Add a pinch of sugar, a pinch of pepper, stir nicely. Add salt as required, cover it and let it saute for about 5-7 minutes. Easy Chilli chicken is ready!

Stir and simmer the mixture reduces and is thick and syrupy. Add back in the chicken and peppers and stir well in the sauce. If you are going to make boneless chilli chicken at home, try using chicken breasts as they are easy to chop. For making restaurant-like chilli chicken, dip the chilli chicken in the cornflour batter. This will make them crispy as well as more appealing.
