  14. Prepare 10 grams Chicken consomme
  15. Take 2 tbsp Grated Parmesan cheese
  16. Prepare 1 as much (to taste) Heavy cream

Sometimes I will also cube potatoes and throw them in. Fry bacon in a large saucepan until crisp. Saute onion in bacon fat until transparent. Stir the garlic into the oil-onion mixture.

Instructions to make Quick Clam Chowder:
  1. This is the can of clams that I used. There is clam meat and juice inside.
  2. Separate the clams and the juice.
  3. Cut all the ingredients. Cut the carrots into smaller cubes than the potatoes, and if you cut the celery even smaller, it will turn out great when boiled.
  4. Sauté the onions with 3 tablespoons of butter. I used ham, but if you use bacon, sauté to make it crispy, and use that oil to cook the onions. If there is not enough bacon fat, add butter.
  5. When the onions are softened, add the celery, carrots and garlic powder and continue cooking.
  6. Add white wine, and keep on high heat.
  7. Add potatoes and ham, and cook for a bit. Add 4 tablespoons of flour into the pot and continue cooking while stirring to prevent sticking.
  8. Add milk, clam juice and chicken consommé, stirring occasionally. Lower the heat when you start to see movement (Do not let it boil).
  9. This is the chicken consommé I used. It is in granule form.
  10. When the vegetables are 80% cooked, add the clam meat.
  11. When the soup is at the right thickness, add powdered Parmesan cheese. You may also add heavy cream if you like.
  12. Sprinkle your favorite herbs on top and the dish is done! Enjoy with crackers or delicious bread.

In this healthy clam chowder recipe, traditional heavy cream is replaced with milk and flour-thickened clam juice and we keep sodium amounts reasonable with lower-sodium clam juice instead of higher-sodium broths.
