This recipe - Malaysian Sambal Udang (Prawn Sambal) - was created by my paternal Grandmother (my popo). Cooking Prawns in Sambal - which is nothing but an aromatic spicy Chilli paste with wonderful notes of locally available Aromatic herbs and spices. This spicy Sambal Udang is one dish we can hardly resist. It pairs well with steamed Jasmine Rice and needless to say that it goes perfectly well with Nasi.

Steps to make PRAWNS WITH BANANA SAMBAL (Udang Sambal Pisang):
  1. Soak the shrimp in lemon juice and soy sauce for 1 hour. Fry shrimp until it changes color. Remove and set aside.
  2. Boil and slice the cassava leaves.
  3. Banana Sambal: mix chopped tomatoes, cayenne pepper, chilis, garlic and shrimp paste. Stir-fry briefly, then add the sugar and salt.
  4. Take the roasted banana and press a bit with the sauce. Serve with fried shrimp.

I recreated my late mother's Sambal Udang. During my recent trip back to Penang, my brothers bought us to have dinner at a local restaurant in Butterworth. Sambal udang was the first recipe I tried from "Cooking for the President". Sambal is a spicy Asian condiment and this Malaysian Sambal Prawn combines chillies with nuts, whole prawns and lemongrass. Add prawns, sugar and salt, stir until well mixed.
