  1. Marinate the chicken with soy sauce, oyster sauce,ginger garlic paste and onions overnight or for several hours.
  2. Break the clumpy cooked rice(I prefer using one day old rice)
  3. In a pan, add oil and fry the eggs stirring to break the eggs the way you would scrambled eggs. After they are cooked,set aside.
  4. In a pan add oil and the cube chicken pieces and lightly season with salt and black pepper and cook the chicken through and then set aside.
  5. In a wok add oil, onions, ginger garlic paste and saute. Then add your carrots and capsicums and cook for 2-3 minutes.
  6. Add in the rice and stir. Add the soy sauce,oyster sauce and a little water to moisten.
  7. Then add in the eggs and chicken and stir until everything is well combined and heated through.
  8. Serve with some steamed cabbages/ spinach. Enjoy.
