This Arroz con Leche is the Cuban version of rice pudding. It's richer and sweeter than regular rice pudding. Being Cuban myself, I prefer this version of this delicious dessert to any other.

The ingredients needed to make Arroz Con Leche:
  1. Prepare 2 cup Calrose rice (Soak in water for 1-2 hours)
  2. Get tea
  3. Get 4 cup Water
  4. Take 6 each Whole Cloves
  5. Prepare 4 each Cinnamon sticks (approximately 3 inches long)
  6. Prepare 1 each Star Anise (whole)
  7. Get In a pot
  8. Prepare 1 can Evaporated milk
  9. Take 1 cup Water
  10. Take 1 can Coconut milk
  11. Get 4 cup Tea from previous step
  12. Prepare 2 cup Soaked Calrose rice
  13. Take Towards the end
  14. Get 1 can Cream of coconut
  15. Take 1 can Sweetened condensed milk
  16. Make ready 1/2 cup Brown sugar
  17. Take 1 tsp Good vanilla extract

To make arroz con leche, start by bringing white rice, water, and a cinnamon stick to a boil over high heat. Next, add both regular milk and sweetened condensed milk to the rice, along with salt, vanilla, and raisins. Arroz con leche, aka rice pudding, was a dessert my mom grew up on. My great-grandma made it, and I wanted to find a recipe that tasted just like it.

Steps to make Arroz Con Leche:
  1. Soak Calrose rice in water for 1-2 hours.
  2. Meanwhile place spices and water for tea in a pot and bring to boil, then reduce heat to medium. Let boil in medium heat for 15-20 minutes.
  3. Once tea is done let cool a little. Strain spices from tea, leave only the cinnamon sticks in it.
  4. Place evaporated milk, remaining 1 cup water, the 4 cups of prepared tea and coconut milk in pot.
  5. Bring to a boil, once it starts boiling drain rice and add to pot. Cook on medium heat until rice is cooked through and mixture thickens.
  6. Once rice is cooked through stir in coconut cream, sweetened condensed milk, brown sugar and vanilla.
  7. Let boil for a little until mixture thickens, make sure you don't let it stick (mixture will thicken up)
  8. Transfer to glass cake dish to cool, top with ground cinnamon.

  10. Optional: you can add raisins if you'd like when you boil the evaporated milk before adding the rice.
