  1. Cook the Toor dal with some water for 4-5 whistles until the dal is fully cooked and turns mushy. Keep this aside.
  2. Heat a pan with oil and add mustard seeds, fenugreek seeds, red chilies, turmeric powder, a pinch of asafoetida and curry leaves to temper. Then add shallots and mix it well. Once the shallots turns light brown, add all vegetables.
  3. Then add tamarind juice; followed by sambar powder and chilli powder. Add water as per your requirement along with required salt then allow it to cook. Cover and cook vegetables for 10 minutes.
  4. Once the vegetables are cooked, then add cooked thoor dal and garnish with chopped coriander leaves and let it cook for few minutes. (I poured cooked vegies into thoor dal but you can also add thoor dal into vegies)
  5. Then turn off the gas and ready to serve.
