The ingredients needed to make Undhiyu:
  1. Prepare 1 tbsp dry peas
  2. Prepare 1 tbs dry dal (broad beans)
  3. Prepare 1 tbsp dry kala chana(chickpeas)

  5. Prepare 1 tbsp dry red dal
  6. Prepare 2 tsp ginger garlic and green chillies (crushed)

  19. Take 1/2 Bowl Fenugreek leaves
  20. Get 1 tsp ginger garlic (crushed)
  21. Take to taste Salt
  22. Make ready 1/2 tsp Turmeric powder
  23. Prepare 1 tsp Red chilli powder
  24. Make ready as needed Oil to fry

This dish is traditionally cooked upside down underground in earthen pots, termed "matlu", which are fired from above. Traditionally undhiyu is cooked into earthen pots on the LOW flame. The pots are sealed, and all the vegetables and masalas are cooked slowly. Cooking undhiyu in the earthen pots gives the rustic and delicious flavour to the dish.

Instructions to make Undhiyu:
  1. To make Muthiya, mix all Muthiya ingredients together. Make a hard dough. Take a small portion and give shape like Muthiya and fry on medium-low flame. Keep it ready.
  2. Soak all the dry ingredients for overnight or minimum 8 hours. Chop all vegetables into big pieces.
  3. Take a heavy bottom cooker. Add oil, crushed ginger garlic and green chillies and asfoitida. Saute for some time. Add red chilli powder turmeric powder and Garam masala
  4. Now add all soaked grams. Add vegetables.
  5. Add fried Muthiya. Salt and half glass water. Close the cooker and give 5-7 whistles. Let it cool. Open and mix it softly.
  6. Serve with Roti or Puri or Paratha
