The way my mom makes the curry with grated coconut it's really yummy. Another easy way to cook is deep fry. Even though I like deep drys I make them only once in a while.

  1. Scrape the bitter melon and slice them finely. Add a tsp. of salt and keep aside for an hour. Wash well. Drain and keep aside.
  2. Heat oil in a pan and temper with mustard seeds. After it stops spluttering, add the urad dal, chana dal and asafoetida. Saute till the dal changes colour.
  3. Add the onion, garlic and curry leaves. Saute till light brown.
  4. Then add the bitter melon, salt and turmeric powder. Cover and keep frying on a medium flame till it is soft.
  5. Then add red chilli powder and sugar.
  6. Continue to fry further for a minute more.
  7. Serve with hot steamed rice and with some ghee drizzled over it
