- Take 1/2 Kg bamboo shoot sliced

- Get 2 onions sliced

- Prepare 2-3 tablespoon grinded coconut

Keep a bowl of water ready. As soon as you cut transfer the bamboo shoots into the water to prevent browning. Next day morning rinse a couple of times. Rinse once more and then cook in the night.
Instructions to make Bamboo Shoot Curry:
- Heat oil in a deep pan. - Put mustard seeds and curry leaves to splutter in hot oil. - Add garlic and red chillies. - Add onions and keep frying. - Put the rice powder and mix with the rest of the masala in oil. - Fry the masala for a little longer on medium heat before adding the bamboo shoots. - Add the grinded coconut and mix well. - Add 1-2 glasses of water, mix and cover for a few minutes. - Remove the cover and cook for a little longer, till gravy is slightly thick. Check for salt and pungency
- Now bamboo shoot curry is ready to serve. It goes well with Neer Dosa or Rice Roti
- Note: Before cooking bamboo shoots, please rinse the chopped bamboo shoots in water for 2 days
