After cooking, blend the soup with an immersion blender or mash into a chunkier soup with a potato masher. Stir in sour cream and cheese.

  7. Once pureed, add back to cooking pot and simmer.
  8. Add cream and stir well.
  9. Gently simmer for 20 minutes. Add some more bacon and chopped green onion.
  10. If too thick, you can thin out with more stock, or cream. Serve and enjoy:)
