- Sauté onion until translucent; add garlic and cook for 1 minute longer
- Wisk in flour to make a rue (it should be the consistency of peanut butter)
- Add chicken consummé to water and slowly wisk into rue
- Add leek seasoning and stir
- Add potatoes and corn; simmer 15 minutes or until potatoes are fork tender
- Stir cream cheese until smooth and wisk in until well blended
- Add most of the chopped bacon, reserving some for a garnish
- Add salt & pepper to taste
- Garnish with remaining bacon, green onions and your favorite cheese. Enjoy !
