- Make ready 1 (14.5 oz) can Black Beans drained and rinsed
- Make ready 3 oz Tomato Paste
- Get 1 (14 oz) can Fire Roasted Tomatoes
- Prepare 1 (28 oz) can Petite Diced Tomatoes drained
- Prepare 2 Tbsp Worstershire
- Make ready 3-4 cups Vegetable Broth
- Prepare Seasoning Blend:
- Prepare 3 Tbsp Chili Powder
- Prepare 2 Tbsp Paprika
- Prepare 1 Tbsp Cumin
- Make ready 1 Tbsp Garam Masala (you can leave this out if not on hand)
- Prepare 1 Tsp Kosher Salt
- Prepare 1 Tsp Dried Oregano
- Take 1 Tsp Dried Parsley
- Take 1 Tsp Fresh Ground Black Pepper
Heat the oil in a Dutch oven or large heavy pot over medium-high heat. Add the onion, carrots, and jalapeño and sauté, stirring often, until the onion is soft and translucent. This is a thick, hearty vegetarian chili that is a hit at parties even among die-hard meat eaters. The TVP gives it the texture of ground beef, and the chiles give it a nice depth of flavor.
Instructions to make Vegan Chili:
- Prep all your ingredients. Heat a large stock pot over medium heat with a little oil. Add your onions first and let them cook down a bit. Then add the garlic. - Once it has simmered add the beans and Broth. Eyeball how much broth you use. I like a thicker chili so I only used about 3 cups. Bring back to a simmer for about 10 minutes.
- At this point I cooled mine down and put in the fridge overnight. I reheated it the next day in the crockpot for a party. I personally think it was better the next day. If you want it the same day cover and let cook on low heat for about an hour. Serve up with your favorite fixings and enjoy… All my guests did. Even the manliest meat eaters loved it.
