These vegetable balls can be enjoyed as a snack by themselves but here I soaked them in a schezwan sauce gravy. Schezwan Sauce plays a key role in various Schezwan recipes. The Schezwan sauce is spicy,tangy and slightly sweeter in taste. After many trials I must say I have created a Killer recipe for Schezwan.
Steps to make Schzewan Vegetable dumplings:
- Take a bowl and add all the vegetables from the ingredients list. Mix them well.
- Add cornflour and all purpose flour/maida. Mix well.
- Then add salt and pepper as per requirement. But dont add too much pepper.
- Mix all the ingredients well for the vegetable dumplings and add a little oil on your hands to make a dumpling balls. Dont add any water in the mixture.
- Note: if you dont add oil in your hands, while making dumplings, the mixture will stick on your hands and it will be difficult to make a proper dumpling ball.
- Heat oil in frying pan and fry the dumplings. And set aside on one plate after frying.
- For schzewan sauce: Heat a pan, add oil and fry garlic, ginger, green chilli and spring onion and stalk.
- Add 1 tbs soy sauce and 1 1/2 tbs vinegar. Add little water for sauce consistency.
- Then add chilli sauce/red chilli paste and salt and pepper. Mix well.
- Once the sauce is cooking on stove, reduce the flame and slowly add dumplings one by one. And mix slowly.
- Close the lid at slower flame for 5 mins.
- Garnish with spring onion and stalk. Or sesame seeds.
