- Get 300 g rice vermicelli (meehoon) - soak in water for 5 minutes and drain

- Take 1 stalk lemongrass chopped finely
- Prepare 3 bird eye chilies (if you like it spicy)
- Make ready Seasonsings:
- Make ready 2 Tbsp fish sauce
- Take 1 Tbsp soy sauce
- Get 1/2 Tbsp tamarind paste
- Take 2 tsp sugar
- Get 1 tsp chicken stock granules
- Prepare 1/2 tsp white pepper
- Make ready 2 cups water
Mee Siam is a Malaysian favorite often served during public functions. This spicy and flavorful dish comes with a variety of colorful toppings. Mee Siam, which means "Siamese noodle", is a dish of thin rice noodles (vermicelli) in spicy, sweet and sour light gravy. It is one of the popular one-dish meals in Singapore.

- Heat oil in the wok. Lightly fry the dried shrimps and tofu but separately. Dish out and put aside.
